Spaghetti alla carbonara

Do you want to make the famous Italian pasta dish “Spaghetti alla Carbonara” with ingredients you can find abroad? Learn with me to prepare an easy and cheap dish for every day. It is a very tasty and fast food.

INGREDIENTS X 3 PEOPLE

  • Bacon 200 g (“guanciale” would be better, if you find it …)
  • 250 g of spaghetti
  • 3 beaten eggs (possibly organic)
  • 40 g grated Parmesan (50% pecorino … if you find it … but not essential)
  • 1 chopped onion
  • 1 tablespoon of olive oil
  • Salt and freshly ground black pepper

PREPARATION

To start preparing our spaghetti alla carbonara recipe, start by putting the water (about two liters), and when it boils, add the coarse salt (a handful).

While you wait for the water to boil, beat the eggs with the grated Parmesan cheese (put only half of it) and some chopped black pepper, mix well and set aside.
Fry the chopped onion, black pepper and bacon in a pan with olive oil.

The spaghetti will be ready one/two minutes before cooking (respect the minutes indicated on the package, for example 11 minutes, no more!). But first (secret) is to put a little of the spaghetti cooking water (1/2 tablespoons), along with the bacon.
At this point, drain the spaghetti and put them in the pot.
Add the egg sauce with grated Parmesan and mix well.

The eggs will cook with the heat of the spaghetti and the sauce will gradually thicken over the heat for a minute.

Finally add more grated Parmesan and serve this delicious dish of Spaghetti Carbonara.
